Recipe: Banana muffins with a nutritional boost

Ingredients:
  • 1¼ cups self raising flour (sifted)
  • ⅓ cup brown sugar
  • 240g (12 scoops) Burra Adult Nutritional Formulation
  • 2 tbsp butter (melted)
  • ½ cup Australian full cream milk
  • 1 egg (beaten)
  • 1 ripe banana
  • ½ tsp cinnamon

Method:
  • Preheat oven to 180°C.
  • Grease a six-hole muffin tray.

  • In a separate bowl, combine melted butter, milk, egg,
    and mashed banana.
  • Gently fold wet into dry ingredients (do not over-mix).
